The French Cheese Board hosted a Bourbon and cheese pairing on September 23, 2014 for select media. September was National Bourbon month and in celebration, Maitre fromager/cheese expert, Max McCalman paired three French cheeses with three premium aged Four Roses Bourbons. The younger yellow label was paired with a nutty aged Mimolette. The Small Batch Bourbon with an aged Comté and the Four Roses Single Barrel was paired with a pungent Epoisses. The combinations were unexpected but perfectly balanced. The press was delighted to discover new and exciting flavors that complemented the Bourbon and brought out all the nuances and complexity in this fine spirit.
