On October 19th, the French Cheese Board hosted Bérénice Lurton of Chateau Climens to lead the tasting of perfectly paired Sauternes and Cheese selections for a guided tasting and luncheon.
Château Climens is an iconic estate of Sauternes and produces one of the most elegant sweet wines in the world. The wines are vibrant, pure and complex, lending themselves to four particularly creative and surprising cheese and wine pairings: fresh, washed-rind, hard and blue cheeses.
Flight 1: Vacherin Mont d’Or and Saint Nectaire
Flight 2: Ossau Iraty and 18 months Mimolette
Flight 3: Affidélice au Chablis and Ami du Chambertin
Flight 4: Fourme d’Ambert and Bleu d’Auvergne
All four flights were paired with all four of the following wines to enjoy each pairing to the fullest: Cypres de Climens 2012, Chateau Climens 2009, Chateau Climens 2007 and Chateau Climens 2005.
