Last Wednesday (10/30), the French Cheese Board and Isigny Ste-Mère celebrated Halloween with a very special cocktail and cheese pairing class. Mimolette was the star of the night as 4 different ages of the Normandy Cheese were displayed on the orange themed table!

The guests first enjoyed a Calvados and Ginger Beer cocktail with some Abbaye Ste-Mère and 12 months Mimolette. Cara Warren, East Coast Sales Representative for Isigny Ste-Mère America, introduced the company and Mimolette cheese. She explained the making process of the cheese and the differences between all the different ages that were presented during the evening.
The pairings of the night were the following :
Apple Cider – 3 Months Mimolette
Fermented Hard Cider – 6 Months Mimolette
Eau de Vie – Blanche de Normandie – 12 Months
Pommeau de Normandie – 18 Months
Calvados – 24 Months
Chef Patricia Williams prepared three different types of Mac N Cheese for the event: plain, wild mushrooms and lobster. The mini portions of the famous American dish were made with Mimolette and Isigny Ste-Mère butter.
All the drinks and cheeses came from the Normand region to highlight the richness of the terroir
