Did you know April is National Grilled Cheese Month? Also April 12 is National Grilled Cheese Day and to commemorate the cheesiest sandwich around, we had Chef Robert Ramsey from the Institute of Culinary Education teach our lucky guests to make some with lots of French cheese and butter involved!
There were three base recipes for the Grilled Cheese Day menu:
The Classic: Comté, emmental, Dijon, pain de mie, cornichons.
Sweet and Savory: Pont l’Evêque, tart apple, Provençal honey, buttered boule.
Assertive: Bleu d’Auvergne, roasted tomato, caramelized shallot aioli, sour dough
The base recipes showcased the flavor combinations that were best with each cheese and once everyone created one, they were able to experiment with other combinations to the grilled cheese effect they wanted (especially for the shot to post on their social media!). And what would grilled cheese be without tomato soup which was a perfect complement to the sandwiches.
